Yummy Noodles with Restore Me Plant Based Broth
Ramen lovers unite! Our plant-based broth acts as the perfect base for a beautiful warming tofu noodle dish. Full of green veggies, pan-fried tofu, and perfectly cooked noodles- we can almost guarantee this dish will be your future go-to winter warmer meal!
Ingredients
🌿 1 Jar of Restore Me broth
🌿 100g ramen noodles
🌿 80g firm tofu
🌿1 tbsp olive oil
🌿 2 spring onions
🌿1 bok choy bulb
To garnish
🌿 Parsley
🌿 1 small chilli
🌿 1 Lime
Method
1. Dice the firm tofu into small cubes. Add to a pan with the olive oil and Sautee on medium heat until brown and crispy. Set aside.
2. Slice the spring onions and roughly chop the bok choy and set aside.
3. Bring a medium-sized pot filled with water to a boil and add ramen noodles. Cook for 2 minutes then drain in colander. Rinse with warm water to remove excess starch.
3 Add the plant-based broth to the same pot on medium high heat and heat for 2-3 minutes until warm.
4. Put your bowl together! Place the noodles on the bottom of the bowl and pour over the warm broth. Top with the crispy tofu pieces, bok choy, sliced spring onions, parsley and a squeeze of lime.
For an extra hit of flavour add a touch of chilli. (This recipe serves 1)
