Get in my BELLY!!! 😋 With the cooler weather setting in, what better way to warm up than with this wholesome and nourishing lentil & veggie soup! Brimming with nutrient rich veggies and our delicious plant-based broth, this soup is definitely a winner (especially when paired with a crunchy slice of sourdough!) 🤤
👨🏼🍳 Ingredients
1 tbsp olive oil
2 garlic cloves, crushed
1 brown onion, diced
2 medium carrots, diced
2 long celery stems, diced
2 cups of brown lentils, rinsed
1 cup kale, chopped
2 jars of our plant-based broth
1 400g tinned tomatoes
½ tsp coriander (leaves or ground)
½ tsp ground cumin
1 ½ tsp ground paprika
½ tsp turmeric
2 bay leaves
1.5 cups of water
1 Lemon
Salt and pepper for seasoning
👨🏼🍳 Method
1. Place a pot on medium high heat and add the olive oil, garlic and brown onion. Sautee until golden and aromatic.
2. Add the celery and carrots and sauté for 5-10 minutes until soft.
3. Add remaining ingredients into the pot and place on high heat until simmering.
4. Once simmering, turn to low heat, place lid on and cook for 30-40 minutes until lentils are soft.
5. Once cooked, remove the bay leaves, add kale leaves and stir through.
6. If you would like to adjust the soup consistency add small amounts of water until desired consistency.
7. Serve in your favourite soup bowl, season with salt and pepper and drizzle a bit of lemon on top!
👨🏼🍳 TIP: For extra flavour, replace the 1.5 cups of water with another jar of our plant-based broth.
