Try one of our no-fuss, no-hassle, just delicious, fast veggie dinners. These recipes use only ten ingredients, packing with all the health benefits to finish your cleanse.

  1. BBQ Veggie Skewers with Chimichurri: πŸ§…

Ingredients:

  • 2 zucchinis, sliced
  • 1 red capsicum, cut into chunks
  • 1 yellow capsicum, cut into chunks
  • 1 red onion, cut into wedges
  • 10 cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water
  • 1 cup fresh parsley, chopped
  • 3 cloves garlic, minced

Instructions:

Preheat the BBQ. Toss the veggies with oil, salt, and pepper. Thread them onto the skewers and BBQ until tender. Mix parsley, garlic, olive oil, salt, and pepper for the chimichurri. Serve skewers drizzled with chimichurri.

  1. Mango Avocado Quinoa Salad: πŸ₯‘

Ingredients:

  • 1 cup quinoa, cooked and cooled
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh coriander, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled

Instructions:

Combine quinoa, mango, avocado, red onion, and coriander. Whisk lime juice, olive oil, salt, and pepper. Toss with quinoa mix. Gently fold in tomatoes and feta. Refrigerate for 30 mins.

Ingredients:

  • 1 cup fresh or frozen corn kernels
  • 1 cup broccoli florets, finely chopped
  • 1/2 cup all-purpose flour
  • 2 tablespoons cornflour
  • 1/4 cup fresh parsley or chives chopped
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground chilli (optional, for some heat)
  • 1 large egg, beaten
  • Salt and pepper to taste

Instructions:

Mix corn, broccoli, flour, cornflour, herbs, baking powder, cumin, chilli, salt, and pepper. Add the beaten egg and stir. Cook spoonfuls on an oiled skillet until golden brown. Garnish with coriander.
